I think there is a real possibility for my ex and I to get back togther. My question is do couples that break-up and get back together very work out in the long run? Do you have any statisics of real life stories that turned into long term relationships?

There are no statistics like that.

My guess is that you stand a better chance having it work out since you've already had experience with each other. You've matured and presumably can deal with what might be coming.

Plenty of couples have done what you are thinking and it worked out. Probably some others didn't work out.

Remarriage is a risky business in any case, 60% of 2nd marriages fail. So your taking your chances no matter what.
