When its quite on the phone and neither of you and your boyfriend are talking and it starts to get boring, what do I talk about?

There's nothing that says you have to talk. Many perfect dates are spent simply lying on your backs staring up at the stars, being together. You can do the same thing on the phone. You can watch the same tv show together, on the phone, and make comments about it.

but really it comes down to what you two are interested in. If you really are bored, hang up! To force a conversation just "because" isn't healthy. You should always talk because you WANT to, not because you feel you HAVE to. The moment you start making parts of your relationship into a chore, it'll suffer.
